As you already know, Bodegas Martín Códax bets by the research and development in order to deepen in the knowledge of the grape albariño, varietal with the one we elaborate the wines of the winery.
Our last challenge is called ALBAROMA, a study that has the object of revelating the varietal aromas of the albariño to increase that character that identifies and does unique our wines.
Viticulture and oenology team already start to work. During the last collected, they selected different representative plots with homogeneous grapes that were collected in different periods, carrying out a late grape harvest and another early one. They made a total of 42 microfermentations of 150 liters once in cellar. When the grape juices and wines are ready our equipment will proceed to the sensorial analyses to see the obtained results.
It is an exhaustive and detailed work that will be prolonged until 2015 and that will allow us to determine a method of maceration to reveal a bigger quantity of aromatic precursors and to know how the state of ripen of the grape affects.
Besides this study will allow us to be more sustainable energetically since the criotolerants microorganisms used on it will prevent to recur to the change of wines temperatures and grape juices.
In the project ALBAROMA other entities as EVEGA, UCLM, Laboratorios Excell Ibérica e Lev 2050 also collaborate and it is financed partially with the European Support FEADER.
